Question:
I have an 8 gallon crock, filled with sauerkraut. Its on it’s second week. The outside of the crock seems to be leaching a brown, sticky, salty substance. What are the chances I’ve contaminated my kraut?

 

Answer: Wow. Now a Red Wing Stoneware Collector I am, Betty Crocker, I am not. Now I have made sauerkraut before, but never heard of this problem. Is your crock to full and now that the kraut is being to ferment, is some of the juices overflowing? If this isn’t the problem, then I guess I do not know enough about the crock you are using, how full, etc to feel comfortable to answer your question. I would ask someone locally who has made sauerkraut in a crock to see if they can help you out. Al Kohlman
